12 Days of Christmas

On the 9th Day of Christmas …  We’re going to share recipes for easy holiday treats!

I have two cheese ball recipes that you and your guests will love.

First is a ham cheese ball:

1 package cream cheese softened                                                                                            3 green onions chopped fine                                                                                                  6-8 oz ham chopped fine. I prefer smoked or black forest.                                                   1-2 splashes of Worcestershire, more or less to taste

Using a fork, smash & stir all ingredients until they are mixed well. (Optional: You can chop pecans, cashews or almonds and either mix with other ingredients or roll chilled ball in mixture to create a light coating.) Place in decorative bowl or plate and surround with Townhouse, Wheat Thins, or Club crackers.

Next, is a chocolate chip cheese ball. (Yes, I said chocolate, yum yum)

1 package cream cheese softened                                                                                         1/2 cup butter, softened                                                                                                       3/4 cup confectioner sugar                                                                                                      2 Tablespoons light brown sugar                                                                                             1 splash of vanilla                                                                                                             Miniature chocolate chips – light or dark.                                                                                   Chopped pecans, candied pecans, cashews, peanuts or almond                                    Optional: dried cranberries chopped extra fine

Combine the butter and cream cheese, either with a fork or hand mixer, until smooth.  Blend in confectioner sugar, brown sugar, and vanilla.  Next, mix chocolate chips and chopped nuts into the mixture, starting with a small amount and adding more gradually to desired strength.  (Optional chopped cranberries can be added at this time as well) Chill for 2 hours, shape into a ball, then roll in remaining chocolate chips and nuts.  Place in decorative bowl or plate and serve with graham crackers or chocolate wafers.

Fantastic Friday

Desperation Breeds Creativity

I was recently in a crunch for time (imagine that) on a Friday night, faced with a dozen neighborhood men playing poker in my garage. My husband likes to host, and I wanted to be the good wife, but what can a girl pull together at the last minute when she hasn’t been to the grocery store in days?

So, I tried something new and yummm, did it pay off! These aren’t your ordinary pigs in a blanket. So, get ready for some flavor and your guests oooing and ahhhing over your newest creation.

You’ll want to grab two cans of butter flake crescent rolls from the dairy section. (Store brand is just as good as name brand for this) Lay them out on a flat surface and cut each triangle into three triangles. This gives you 48 triangles.

I just happened to have a package of Hillshire Farm Gourmet Creations sausage links we were planning to grill later in the weekend.  Beef with Bacon and Monterey Jack Cheese – need I say more?

Cut each link into 12 slices and lay one in the center of each triangle. Pull the corners of your dough up to the middle and press the tips together.  Cook according to the crescent roll can instructions – usually 375 degrees for 12-15 minutes, just until golden brown.

Add your favorite condiments to compliment the sausage flavor you chose. Spicy, gourmet, or honey mustard, hot sauce, marmalade, BBQ, marinara. Or, they’re great by themselves. And licking fingers IS acceptable etiquette.

Checkout the selection at your local grocery – there are several brands and flavors. Here are just a few: Chicken Apple with Gouda Cheese, Beef & Jalapeno with Monterey Jack Cheese, Sweet Italian with Peppers and Mozzarella. Aidells has some great flavors, too: Italian with Mozzarella cheese, Pineapple and Bacon, Portobello Mushroom, Roasted Garlic & Gruyere Cheese, Sun-Dried Tomato with Mozzarella Cheese, and Artichoke and Garlic.
